Ok folks, as promised I am going to let you in on the trail riding cowgirls secret
(ok not so secret) recipe for cowgirl cobbler. Those dandy little berries I picked the other night turned into a scrumptious summer favorite around here. This is an easy recipe and the beauty of it is you can substitute the berries with peaches or apples or just about any fruit you can think of. Here is the recipe:
COWGIRL COBBLER
4 CUPS FRESH BERRIES (YOUR CHOICE)
1 TBSP LEMON JUICE
1 LARGE EGG
1 CUP SUGAR
1 CUP ALL PURPOSE FLOUR
6 TBSP BUTTER
Preheat oven to 375 degrees. Place berries in a lightly greased square baking pan; sprinkle with lemon juice. In a medium bowl stir together egg, sugar and flour until mixture resembles coarse meal. Sprinkle over fruit. Place pats of butter evenly on top of fruit and dry mix. Bake at 375 degrees for 35 minutes or until lightly browned and bubbly. Let stand 10 minutes. Serve warm with whipped cream or ice cream.
This is about six servings.

Oh goodness, that looks SO good!! I think my mom used to make cobbler w/the berries we'd pick, too. I want to find a patch of berries now so I can try it out!
Yummy!!! I will definitely have to write this recipe down for later. We have raspberries that are just in season now, and the blackberries will be ready in August/September. My husband LOVES this type of desert...I am more of a chocolate girl myself:)
Oh boy, that looks delicious! You couldn't have posted it at a better time, BP and I have realised we brake out in pimples when we eat too much chocolate, we're like a pizza topping at the moment. So I've been trying to cook stuff without chocolate in it, preferably fruit. I'm going to have to try this with apples!! Hmm, might be an idea to wait until I get back otherwise it'll all be gone!!!

I just wanted to come back and let you know I made this with apples the other days and it's absolutly DELCIOUS! I just had the last peice today and it still tasted as good today as when I made it. Thanks soo very much for sharing!
